Diabetes-Friendly, Blueberry-Lemon Frozen Yogurt Kulfi with NuStevia

This diabetes-friendly, Blueberry-Lemon Frozen Yogurt Kulfi is a sugar-free, healthy recipe, made using Stevia extract! This frozen yogurt kulfi tastes delicious and is a breeze to make. For this recipe, I chose NuNaturals Presweet™ Tagatose and Lemon Stevia liquid. None of these has even a hint of bitterness in them. The tagatose looks and tastes like powdered sugar and it even caramelizes similar to your ordinary sugar. The Lemon Stevia liquid is just an amazing thing to work with. Diabetes-Friendly, Blueberry-Lemon Frozen Yogurt Kulfi with NuStevia
Ingredients
- Unsweetened plain yogurt or curd: 800 g (hung, to remove water)
- Dried blueberries: 4 tbsp
- PreSweet™ Tagatose: 2 tbsp
- Lemon NuStevia™ Liquid: 3 droppers full
- Almonds blanched: 6
- Instant oats powdered: 2 tbsp
- Coconut cream optional: 2 tbsp
Instructions
- Remove all the water from the yogurt or curd by hanging it up in a muslin cloth for 1 hour.
- Remove the hung yogurt and blend with the remaining ingredients, until very smooth. Pour this mixture into kulfi moulds (even popsicle moulds will do) and deep-freeze, until set. It takes around two hours for this kulfi to be set.

I received the whole range of Stevia products and must it fits perfect for my other half’s diabetic. I sometimes feel sorry for him because he can’t eat the store bought ice-cream or when we dine out, he also can’t enjoy the kulfi we order.
Kulfi with blueberry and lemon and the Nustevia product are just what he needs. Trilled to that you share a recipe which I am so comfortable with and one I am gonna try for this weekend.

I use Stavia on and off, but I am all for trying anything that does not have an after taste. Great dessert! Yummm!!
