Whether you are a pro or you are struggling on how to make modaks, this Fusion Modak recipe is just the right recipe to start with making modaks… or shall I say, Fusion Modaks? This Spiced Pumpkin Pie Modak is unique because even a newbie can make it… it is basically an Ukadiche Modak (Steamed Modak) with a Spiced Pumpkin Pie filling! I love it when Desi meets Western flavours in a modak or any Indian sweet. Do you? If not yet, then you must try this recipe.

This fusion modak is very easy to make. To make Spiced Pumpkin Pie Modaks, I didn’t use a mould or the traditional flower shape. I wanted to tell you all that even without a mould and without acing the flower shape of the covering of Ukadiche Modak, you can make a modak. Making modaks at home is safer than ordering from outside, especially in these Corona times, when we need to be extra careful. So, on this Ganpati festival, make your own modaks. Although this is a gluten-free Modak recipe, you can always add some Graham-cracker powder/ Marie biscuit powder to the dough of the modak covering for an extra-rich flavour. Enjoy!
Spiced Pumpkin Pie Modak | Fusion Modak Recipe | Ukadiche Modak Without Mould or Flower Shape
Ingredients
- 160 g Boiled and mashed pumpkin
- 1 tsp Cinnamon powder
- ½ tsp Ginger paste
- 4 Cloves
- Tiny piece or a pinch of the powder Nutmeg
- 1 tsp Cornflour
- 5 Tbsp Condensed Milk (Amount may vary according to individual preference.)
- 1 tsp Ghee
Ingredients for the Covering:
- 1 cup Rice Flour
- 1.5 cups Water
- ¼ tsp Salt
- 1 tbsp Ghee
Instructions
- Drain out all the water from the boiled pumpkin. Blitz the pumpkin puree with cinnamon powder, ginger paste, cloves, nutmeg, cornflour and condensed milk, until smooth.
- Heat ghee and sauté the pumpkin puree mixture for 3 min on a slow flame. Switch off the gas and keep the filling aside.
- For the covering, bring the water to a boil. Add the salt.
- Add the rice flour and mix well.
- Switch off the flame and cover for 5 min.
- After 5 min, spread the dough on a plate and start kneading with a spatula.
- When the dough is cold enough to touch, knead the dough with hand while it is still warm.
- Take a small amount of the dough and flatten with hand. Put 1 tsp of the filling in it.
- Using a mould or just using hands, shape into small modaks now. Steam these for 10 min.
